Under the direction of Head Chef Giacomo Hassan, the kitchen celebrates the best local produce with a commitment to biodynamic and sustainable methods. The menu is a reflection of this philosophy, featuring signature dishes that are both creative and rooted in tradition. Standouts include the sea-urchin royale, glazed eel with coleslaw, and braised pork jowl on pan tumaca, as well as the artichoke tatin, which is based on a recipe from the chef's own Tunisian grandmother.
