Raül Balam Ruscalleda

Raül Balam Ruscalleda is a Catalan chef from one of Spain's most renowned culinary families. Raised in a kitchen-driven environment, he developed a personal approach to Mediterranean cuisine while working at the legendary Sant Pau, where he became a key member of the creative team.
Since 2009, he has been the chef of Moments at Mandarin Oriental Barcelona, creating themed tasting menus and exploring new gastronomic concepts. In 2022, he reopened Sant Pau as Cuina Sant Pau, a relaxed dining concept centred on seasonal local produce, and in summer 2026 he is opening Cuina Burger, a more casual venture.
Raül has co-authored several books with Carme Ruscalleda, including Anti-Aging Cuisine, and recently published Enganchado.
