Paolo Casagrande
Paolo Casagrande is an elegant and composed chef who balances professional ambition with a commitment to excellence that inspires his entire team. After studying at the Alfredo Beltrame Hospitality School in Vittorio, he honed his skills in Italy before working in prestigious Parisian kitchens, including Les Elysees du Vernet and Taillevent under Alain Solivères.
In 2003, Solivères introduced him to Martín Berasategui, beginning a partnership that has lasted over two decades. In 2005, Berasategui placed Paolo in charge of M.B. at the Ritz-Carlton Abama in Tenerife, where he earned the restaurant's first Michelin Star in 2010. In 2012, he was appointed to lead Lasarte Restaurant in Barcelona, earning its third Michelin Star in 2017.
Today, Paolo also serves as Gastronomic Director at Orobianco in Calpe, which earned its first Michelin Star in 2024. He is also the founder of Santalo 86, a private culinary hub in Barcelona.
