The restaurant's name and playful spirit are inspired by a charming legend of King Adolfo X "El Tripero," who, during a visit to the innkeeper Paco Meralgo, was served a glass of wine with a slice of chorizo placed on top as a "tapa" to keep the dust out. The king loved the idea so much that he decreed all wines in the kingdom be served with a tapa.
