Restaurant Koy Shunka
Koy Shunka is a Michelin-starred Japanese restaurant led by chef Hideki Matsuhisa. The name translates to "intense seasonal aromas," a philosophy that guides the kitchen's dedication to the craft.
The restaurant itself is a discreet, almost secret address, hidden behind a large door with minimal signage that you often have to knock on to enter. Inside, the contemporary space features an impressive U-shaped counter where guests can watch the culinary action, a wood-fired oven, and large fish-maturing cabinets. Chef Matsuhisa's cuisine masterfully blends Japanese techniques with premium Mediterranean ingredients, resulting in creative dishes that focus on well-conceived pairings. The experience is built around three tasting menus that vary in the number of courses, with the menu highlighting dishes like the Shun Yasai Namako course featuring seasonal vegetables and a memorable cod and scallop pilpil.
